Black Bean Brownies

These black bean brownies are full of flavour and fibre, and are also gluten-free. They make a delicious holiday treat and can be paired with some raspberries on the side.

Black Bean Brownies

Makes 24 mini brownies

3 cups Black Beans, rinsed and drained

2 eggs

3 Tbsps vegetable oil

1/2 tsp pure vanilla extract

1/3 cup unsweetened cocoa powder

1/2 cup sugar

1/4 tsp sea salt

1/2 tsp baking powder

chocolate chips

Chopped walnuts

1. Preheat the oven to 350F. Spray the muffin tin(s) with cooking spray or coat it with vegetable oil.

2. using a food processor, pulse the black beans into a chunky consistency. Add in the eggs, vegetable oil, vanilla extract, and blend altogether until somewhat smooth.

3. Add in the cocoa powder, sugar, salt and baking powder, and blend until everything is incorporated. the mixture will be somewhat smooth, with small pieces of black beans in the batter.

4. Pour the batter into the muffin tin(s) and top it off with a couple chocolate chips and chopped walnuts.

5. Bake in the oven for about 15-20 minutes, or until a toothpick some out clean. Let cool for about 10 minutes.

6. Remove the brownies by gently running a knife around the sides then lift them out.

Enjoy with some raspberries or other festive fruit on the side!
