Balsamic Pasta with Chicken and Vegetables

Makes about 4-6 single servings

Make ahead “Italiano” Seasoned Chicken

1 chicken breast, sliced into strips

1-2 tablespoons of italian seasoning (ClubHouse brand recommended - the “Italiano” blend)

1 tsp salt

1 tsp pepper

1 tsp garlic powder

1-2 tablespoons of lemon juice

5 tablespoons of olive oil

1. Combine the chicken, Italian seasoning, salt, pepper, garlic powder and olive oil into a bowl. Mix everything together until well combined. cover the bowl with plastic wrap and let it sit in the fridge overnight, or at least for a couple hours. Feel free to cook the chicken right away if you need to.

2. In a pan over medium-high heat, cook the chicken for about 10-15 minutes, until browned and well done.

Balsamic Pasta with Chicken and Vegetables

350 g, or half a package of spaghetti, cooked

3 garlic cloves, minced

1-2 zucchini, sliced

10-15 heirloom cherry tomatoes

“Italiano” seasoned chicken

1/4-1/2 cup of parmigiano-reggiano cheese, grated

3-6 tablespoons extra virgin olive oil

1/4 cup balsamic vinegar

1. In a large pan, over medium-low heat, pour in the oil. add in the garlic and let that sauté for a few seconds. add in the zucchini and sauté for about 1 minute, and then add the heirloom cherry tomatoes. Cook the vegetables for about 2-3 minutes, and then add the chicken. After about 2-3 minutes, add in the spaghetti and toss all the ingredients together.

2. Add in the balsamic vinegar and parmigiano cheese, and toss altogether.

3. Garnish with some more parmigiano and pepper. enjoy!

TIP: Make this a one-pan meal, by boiling the spaghetti in a large pan, and using the same pan to cook the entire meal!
