Pineapple Chicken Stir-Fry with Bok Choy
Makes 4-6 servings
Pineapple chicken stir fry
Ingredients
2 chicken breasts, cut into chunks
1/2 cup cornstarch
2 tsps garlic powder
2 eggs
vegetable or canola oil
1 tbsp ginger, minced
1 tbsp garlic, minced
1 carrot, sliced
1/2 red bell pepper, cut into chunks
1/2 yellow bell pepper, cut into chunks
1/4 cup water
1/4-1/2 cup soy sauce
1/2-1 cup pineapple juice
1/4 cup chicken broth
1 cup water + 3 tbsps cornstarch - “cornstarch slurry*”
1-2 cups fresh pineapple chunks
1. In a large bowl, whisk eggs. set aside.
2. In another large bowl, combine 1/4 cup of cornstarch, garlic powder, 2 tablespoons of soy sauce and chicken. mix until coated. Pour the chicken mixture into the egg mixture and combine. Add the rest of the cornstarch and mix until well coated. Set aside.
3. In a large pan/wok with 1-2 tablespoons of oil over high heat, pan fry the chicken, about 2-4 minutes on each side. the chicken should be crispy on the outside and cooked through on the inside. You may have to cook the chicken in batches. After the chicken is done, remove the chicken from the pan into a bowl with paper towel. Set aside.
4. In the same large pan/wok with 1-2 tablespoons of oil over medium-high heat, add in the garlic and ginger. Saute for about 1 minute, and then add the carrots. saute for 30 seconds, and then add about 1-2 tablespoons of water. cover with a lid for about 1 minute, or until the carrots have slightly softened.
5. Add in the bell peppers and saute for 3-5 minutes. Add in the rest of the water, soy sauce, pineapple juice and chicken broth. Simmer on medium-low for 3-5 minutes with the lid on top. Add in the cornstarch slurry and combine. Let the sauce cook for about 2-3 minutes.
6. Add in the chicken and pineapple, and coat everything with the sauce. Serve with bok choy and rice.
*Cornstarch slurry is water and cornstarch mixed together. If you do this before cooking, the cornstarch may sink to the bottom of your bowl, which means you have to give it a stir before adding it to your sauce.
Simple Bok Choy Stir Fry

4-6 heads of bok choy, washed with separated leaves
1 tbsp garlic, minced
1 tbsp ginger, minced
Vegetable or canola oil
Water
Soy sauce (optional)
1. In a large pan/wok, add about 2 tablespoons of oil over high heat. Add in the garlic and ginger and saute for about 30 seconds. Add in the bok choy and toss for about 1 minute.
2. Add in about 2 tablespoons of water and cover with a lid. after about 1-2 minutes, the bok choy should have softened. You may add a drizzle of soy sauce to taste.
