Sourdough Starter With Nicole From Flour Sessions

I had the pleasure in having Nicole from Flour Sessions talk about Sourdough Starter and also answering questions about what she does and her impact to her local community. Check out IGTV for the full video.

Nicole’s Sourdough Starter Recipe:

How to start a starter:

150g water

150g whole wheat flour

Mix and let sit for 24h

Discard half and mix again with 75g water/75g whole wheat flour

Repeat for 3-10 days until it regularly doubles. One it is at this point, you can use it to bake with.

How to maintain:

50g starter

100g water

50g all-purpose flour

50g whole wheat flour

Mix and let sit till it’s doubled. Then it’s ready to use for a levain or you can tuck it away in the fridge.
