Grilled Baguette With Garlic Goat Cheese, Peaches, Prosciutto and Cucumber
Makes 1-2 Servings
Ingredients
Grilled peaches, sliced
Cucumber, sliced
Prosciutto, 1-2 slices per serving
Baguette, grilled and cut into 5-6” slices
Thyme leaves, to garnish
Garlic Goat Cheese:
1/3 cup goat cheese
1 garlic clove, grated
Pinch of salt
1-2 tsps whipping cream (optional)
1. In a medium sized bowl, mix the goat cheese, garlic and salt. Add some whipping cream if you want a more smooth, yet fluffy texture.
2. Assemble the baguette with the goat cheese spread, peaches, cucumber, prosciutto and thyme. Enjoy!
