Chunky Corn & Tomato Guacamole
Makes 2-3 servings
Ingredients
2 ripe avocados
1/2 cup frozen corn, cooked
1/2 cup cherry tomatoes, quartered
Cilantro or parsley, minced
1/4 red onion, diced
Juice from 1/2 lime
Pinch of salt
1. Mash the avocados in a large bowl. Add the other ingredients and combine. Serve with tortilla chips!
