Persian Okra Stew (Khoresh Bamieh)
Makes 4-5 servings
Ingredients
2-3 tbs olive oil
2-3 cloves of garlic, minced
1/2 an onion, diced
1/2 tsp dried turmeric
1/2 lb beef stew meat, cut into 1/4 inch chunks
1/4 cup tomato paste
1 can of diced tomatoes
1 cup beef broth
1/2 lb of okra, washed and trimmed
1 bay leaf
Salt
Pepper
1. In a large pot or dutch oven over high heat, saute the onions and garlic with olive oil. Add in the turmeric and stir. Add in the beef and cook for about 5 minutes, or until almost done.
2. Add in the tomato paste and stir. Add the diced tomatoes and beef broth, and simmer on low for about 10 minutes with the lid on top.
3. Add the okra and stir. Add in the bay leaf. Simmer on low for another 15 minutes.
4. Season with salt and pepper. Enjoy with rice!
