Sweetcorn Fritters

Makes 6-8 patties

Ingredients

2 cups of fresh corn kernels

1/2 cup all-purpose flour

1 1/2 cup milk

1 egg

Salt

Pepper

Vegetable oil

Avocado

Bacon

Sour cream

Green onion, chopped

1. In a bowl combine the corn kernals, flour, milk, egg, salt and pepper. Mix well.

2. In a pan over medium-high heat with about 2 tablespoons of vegetable oil, pour about 1/4th cup of the corn batter. You might be able to fit 2 or 3 fritters into the pan, depending on the size of the pan. After about 2-4 minutes (or until one side has browned), flip the fritters.

3. Assemble the fritters with avocado, bacon, sour cream, green onions, and other ingredients you would like!
