Almond Butter Chocolate Chip Cookies
Makes 20 cookies
Ingredients
2 cups all-purpose flour
1 1/2 tsps baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
2/3 cups almond butter (I used crunchy almond butter)
1 1/2 cups brown sugar
2 eggs
2 tsps vanilla extract
1 cup dark chocolate chips
Sea salt
1. Preheat the oven to 350F. Line 2-3 baking trays with parchment paper. Set aside.
2. Mix the flour, baking powder, baking soda and salt in a bowl. Set aside.
3. In a stand mixer or hand mixer, mix the unsalted butter and almond butter for about 1 minute. Scrape the edges down, and then add the brown sugar and mix for another minute until creamy. Add in the eggs and vanilla extract, and mix for another minute. Scrape down the edges if needed. Add in the dry ingredients and mix until combined and a batter forms.
4. Fold in the chocolate chips. Using an ice cream scooper, scoop the batter onto the baking trays. Add a bit of sea salt on top of each cookie. Freeze the cookies for about 15 minutes, and then bake the cookies for about 20 minutes. The cookies should be done when they have been browned.
