Gluten-Free Double Chocolate Chip Cookies

Makes 12

Ingredients

1 cup gluten-free flour (such as Bob’s Red Mill)

1/2 cup cocoa powder

1/2 tsp baking soda

1/2 tsp salt

1/2 cup unsalted butter, room temperature

1/2 cup granulated white sugar

1/2 cup brown sugar

1 egg

1/2 tsp vanilla extract

1 cup chocolate chips

1. Preheat the oven to 350F. Line 2 baking trays with parchment paper. Set aside.

2. In a large bowl, mix the flour, cocoa powder, baking soda and salt. Set aside.

3. In a hand mixer of stand mixer, mix the butters and sugars for about 1 minute. Add the egg and vanilla and mix for about 1-2 minutes. Scrap down the sides with a spatula.

4. Add the dry ingredients and mix, and then add the chocolate chips.

5. Scoop out the cookies onto the trays, and freeze the trays for about 15 minutes. Take them out, and then bake for about 15 minutes or until the cookies have expanded and browned a bit more darker.
