Island Turkey Meatballs featuring Island Gurl Foods

Makes 12 meatballs
Ingredients
1 pack of ground turkey
1/2 cup Panko (I used gluten-free Panko)
1 egg
1/4 cup chopped parsley
1/4 cup Mango Jerk Sauce (plus more to serve on top)
Pinch of salt and pepper
Olive oil
Chopped green onion to garnish
Basmati rice
Cucumbers and tomatoes, sliced
1. Preheat the oven to 375F. Line a baking tray with parchment paper. Set aside.
2. In a large bowl, combine the ground turkey, Panko, egg, parsley, the Mango Jerk Sauce and salt and pepper. Mix all together.
3. Roll into 12 meatballs and place them on the baking tray. Drizzle with about 3 tbs of olive oil. Bake for 20-25 minutes, turning them mid-way through.
4. Serve with rice and vegetables. Garnish with green onions. Enjoy!
