Mushroom Carnitas Tacos

Makes about 8-10 tacos

Ingredients

1 pack of king trumpet mushrooms (About 15 mushrooms)

1 pack of shiitake mushrooms (About 15 mushrooms)

Juice from 1 lime

Juice from 1 orange

2-3 tbs of taco seasoning blend

Salt

Pepper

Extra virgin olive oil

3 cloves of garlic, minced

8-10 corn or flour tortillas

Avocado

Onions, diced

Lime wedges (to garnish)

1. Slice the shiitake mushrooms, and shred the king trumpet mushrooms with 2 forks. Put the mushrooms in a large bowl.

2. Add the lime and orange juices, taco seasoning blend, and a pinch of salt and pepper into the bowl. Mix all together.

3. In a pan over high heat, sauté the garlic for about 30 seconds. Add the mushroom mixture, and cook until the mushrooms have wilted and browned slightly.

4. Assemble the tacos with the mushrooms, avocado, onions and lime wedges. Enjoy!
