Chicken Cheddar Burgers with Guacamole & Cilantro Crema

Makes 3-4 large patties

Ingredients

For the guacamole

1-2 avocados

Juice from 1 lime

Pinch of salt

For the Cilantro Crema

Sour cream

Mayonnaise

Garlic

1 tsp lime juice

About 3 sprigs of fresh cilantro

Salt

For the burgers

Extra lean ground chicken (454g)

1 tsp paprika

1/2 tsp chili powder

1 tsp ground cumin

1 tsp garlic powder

1/4 cup finely diced onions

2 cloves garlic, minced

Juice from 1/2 a lime

Salt

Pepper

Vegetable oil

Burger buns

Red onions, sliced

Tomatoes, sliced

Cheddar cheese slices

1. Make the guacamole - mash the avocados, and add lime juice and salt. Mix. Refrigerate until ready to serve.

2. Make the Cilantro Crema - Combine everything into a food processor and blend until a sauce forms. Refrigerate until ready to serve,

3. In a bowl, combine the ground chicken, spices, onions, garlic, lime juice, pinch of salt and pepper. Mix well - using your hands is the best tool!

4. Pan fry the burgers on high heat with vegetable oil until both sides are browned and they are cooked on the inside. Add the cheese slices on top, and cover with a lid until the cheese melts. Toast the burger buns.

5. Assemble your burgers with the burger buns, patties, guacamole, cilantro crema and vegetables. Enjoy with sweet potato fries.
