Easy Mezze

Za’atar Manakish
Ingredients
1 long flatbread, or pita bread
2-3 tbs extra virgin olive oil
3-4 tbs za’atar seasoning
Pinch of salt

1. Preheat the oven or toaster oven to 350F.

2. Brush or spread the olive oil onto the flatbread. Sprinkle with za’atar seasoning and salt.

3. Toast for about 5-7 minutes, or until browned and slightly crispy.

Baba Ganoush
Ingredients

1 can of baba ganoush (example)
1 tb extra virgin olive oil
1/2 tb lemon juice
1 garlic clove, grated
Pinch of salt

1. Mix all of the ingredients. Spread the mix on a small plate.

Grain-Free Tabbouleh Salad with Halloumi
Ingredients

2-3 slices of halloumi cheese
Extra virgin olive oil or vegetable oil
1/2 bunch, or roughly 2 cups of chopped parsley
6-7 cherry tomatoes, halved
1/4 cup diced red onions
1/3 cup diced cucumbers
1/2 tb lemon juice
1 tb extra virgin olive oil
Pinch of salt

1. Pan-fry the halloumi cheese with a bit of vegetable or olive oil. (Follow the instructions on the package). Cut into triangles. Set aside.

2. In a bowl, combine the parsley, cherry tomatoes, red onions and cucumbers. Toss with lemon juice, extra virgin olive oil and salt. Top with the halloumi cheese.
