Simple Pumpkin Ricotta Muffins

Makes 12

Ingredients

1 cup pumpkin puree
1 cup ricotta cheese
1 egg
1/2 tsp vanilla extract
1/3 cup vegetable oil
1/2 cup sugar
1 1/2 tsp pumpkin spice
1 3/4 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

1. Preheat the oven to 375F. Spray a muffin tin with cooking oil, and set aside.

2. Using a hand or stand mixer, mix the pumpkin puree, ricotta cheese, egg, vanilla extract and vegetable oil all together until everything has been mixed through. Add in the sugar, pumpkin spice, flour, baking soda, baking powder and salt, and mix until a batter forms.

3. Pour the batter into each cup in the tray, about 3/4 of the way. Bake for about 20-25 minutes, or until the muffins have been browned.
