Simple Hummus with Roasted Cherry Tomatoes

Just add some raw vegetables, pita bread and crackers, and this dish becomes a tasty snack!

Simple Hummus

Makes 2-3 cups of hummus

1 can of canned chickpeas; with 1/3 cup of chickpea liquid reserved

1/4 cup tahini

1 garlic clove

1/4 cup olive oil

2 tbsps lemon juice

1 tsp cumin

1/4 tsp paprika

salt

Roasted Cherry Tomatoes:

255g or about 20-25 cherry tomatoes, halved.

Olive oil

oregano

salt

pepper

Simple hummus:

1. Reserve 1/3 cup of chickpea liquid. rinse the chickpeas.

2. In a food processor, combine the tahini, garlic clove, olive oil and lemon juice. blend until smooth.

3. Add in the chickpeas and blend for about 2 minutes. add in the cumin, paprika and salt. add in the reserved chickpea water. blend until smooth.

Roasted Cherry Tomatoes:

1. Preheat the oven to 375F. line a sheet pan with parchment paper. Set aside.

2. Place the cherry tomatoes on the sheet pan; skin side down. season with olive oil, oregano, salt and pepper. roast in the oven for about 10-12 minutes, or until the tomatoes begin to crinkle.

Serve with some raw vegetables, pita bread and crackers on the side.
