Superfood Salsa
Makes about 2-3 cups
255g or about 20-25 cherry tomatoes, quartered
1 orange bell pepper, diced
1 mango, diced
1/2 a red onion, diced
1 avocado, diced
pomegranate arils
2 tbsps cilantro, finely chopped
1 tbsp lime juice
Salt
1. In a bowl, combine the cherry tomatoes, bell pepper, mango, red onion, avocado, pomegranate arils, cilantro, lime juice and salt. Mix until fully incorporated.
2. Serve with tortilla chips or add it to a bowl or salad!
Tips:
Add some texture using frozen pomegranate arils!
Defrost frozen pomegranate arils for about 20 minutes before adding them into your salsa. The pomegranate arils will soften slightly, while still retaining a light crunch to the salsa.
