30 Minute Meal: Roasted Vegetable Pizza

This meal can be made in 30 minutes using store-bought pizza dough, or preparing the dough a day in advance! (I recommend to use store-bought pizza dough, to have dinner ready within 30 minutes!)

makes about 6 slices

Pizza dough*

1/2 + 1/4 + 2 tbsps cold water

1 tbsp olive oil

1/2 tsp yeast

2 cups flour

1/4 tsp salt

or you can use store-bought pizza dough

Roasted vegetables

Zucchini, sliced

Heirloom cherry tomatoes, halved

Red bell pepper, cut into small chunks

Mushrooms, sliced

1-2 tsps Italian seasoning

1-2 tsps oregano

1-2 tsps garlic powder

Salt

Pepper

Olive oil

Mozzarella cheese, shredded

Make the pizza dough at least 24 hours in advance, and let the dough rise in the fridge. or, you can always use store bought dough:

1. Mix the water and yeast in a bowl. add the oil. set aside.

2. Using a stand mixer with the dough hook attachment, combine the flour and salt. slowly add the water mixture. mix until combined.

3. Knead the dough, and place it in a bowl with a little bit of oil. cover the dough with plastic wrap, and place in the fridge overnight.

Assembly:

1. preheat the oven to 425F. In a baking tray with parchment paper, combine all of the ingredients for the grilled vegetables. place in the oven for about 10 minutes, or until done.

2. Flatten out the pizza dough with your hands, and sprinkle on the cheese and place the vegetables on top. Bake in the oven for about 15 minutes, or until browned on the bottom.

*Please note that not all pizza doughs take 24 hours to rise. There are plenty of variations and pizza dough recipes out there - this is just one of them!
