Berry-Banana Smoothie Bowl with Walnut Granola

Makes 1-2 servings

Ingredients

Granola:

1 1/4 cups large flake oats

1/4 cup brown sugar

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1 cup chopped walnuts

1/4 cup + 2 tbsps maple syrup

1/4 cup + 2 tbsps canola or vegetable oil

1. Preheat the oven to 350F. Line a baking tray with parchment paper. Set aside.

2. In a large bowl combine the oats, brown sugar, cinnamon, nutmeg, salt and walnuts, and mix until incorporated.

3. Pour in the maple syrup and oil (leaving out the “2 tablespoons”) and mix until well combined.

4. Pour the granola mixture onto the baking tray. Spread the mixture with a spoon. Drizzle the remainder of the maple syrup and oil on top. Bake in the oven for about 20-25 minutes, while stirring the granola from time to time, so that all sides are well baked.

5. Remove from the oven, and let it cool completely before serving with the smoothie bowl!

Smoothie Bowl:

1 frozen banana

4-5 strawberries

1-1 1/2 cups frozen blueberries

5-6 tbsps milk

1. Combine all the ingredients into a blender and blend. (Use the puree option if you have that). The consistency should be in between a sorbet and smoothie. You may add more fruit and milk to balance off the texture.

2. Top your smoothie bowl with the walnut granola and other fruits!
