Sausage and Vegetable Pasta Alfredo

Makes 6-8 Servings

Ingredients

1 box of pasta of your choice, cooked

3-4 tbsps olive oil

3-4 garlic cloves, minced

1/4-1/2 cup red onions, diced

3-4 smoked sausages, sliced

1 carrot, diced

1/2-1 red bell pepper, diced

2 tbsps butter

1-1 1/2cup of 35% or heavy cream

1 1/2 cup parmigiano reggiano cheese

Pepper

Parsley, to garnish

1. In a large pan over medium-high meat, pour in the oil. add garlic cloves and red onions. Let it saute for about a minute, and then add the sausage. Cook for about 5 minutes, and then add the carrots. after about 1 minute, add the bell peppers. Let the vegetables and sausage cook for about 5 minutes, and then remove everything into a bowl.

2. In the same pan, add the butter and stir until it is melted. Add in the cream and let that simmer on low heat, for about 3 minutes. Turn the heat off and remove the pan from the heat. Add in the cheese and stir until incorporated. Adding the cheese without the heat on helps the cheese melt more smoothly.

3. Add the vegetables and pasta, and give everything a stir until incorporated. Garnish with pepper and parsley. Enjoy!
