30 Minute Meal: Chicken Gyros with Tomato-Cucumber Salad

Makes 2-3 servings

Ingredients

Pita bread (store-bought or homemade - i used homemade!)

Tzatziki (store-bought or homemade)

For the chicken

6 chicken thighs, cut into strips

1-2 tbsps Greek seasoning (like this one)

1 tsp garlic powder

1 1/2 tsp paprika

1/2 tsp dried oregano

1/2 tsp cumin

1/4 cup Greek yogurt

Salt

Pepper

Olive Oil

For the salad

1 tomato, diced

1/2 cucumber, diced

1/4 red onion, diced

1 tbsp parsley, finely chopped

1/2 tsp lemon juice

Salt

1. In a bowl, marinate the chicken with the greek seasoning, garlic powder, paprika, dried oregano, cumin, Greek yogurt, a pinch of salt and a pinch of pepper. Mix until combined. Set aside.

2. In another bowl, combine the tomato, cucumber, red onion, parsley, lemon juice and salt. stir and set aside.

3. In a pan with olive oil over medium-high heat, cook the chicken for about 10-20 minutes, or until browned and fully cooked on the inside.

4. Place the chicken, salad and tzatziki on the pita. Garnish with lemon wedges and parsley. Enjoy!
