Roasted Cauliflower Steak With Golden Beet Hummus And Burst Cherry Tomatoes
Makes 2-4 servings
Ingredients
Golden Beet Hummus
2 small golden beets, roasted and quartered
1/2-1 cup canned chickpeas, with the chickpea liquid
2-4 tbs chickpea liquid
1 garlic clove
2-4 tbs olive oil
1-2 tsps lemon juice
1/2 tsp cumin
1/2 tsp turmeric
Salt to taste
1. Combine all ingredients into a food processor. Blend until smooth.
Roasted Cauliflower Steak (or just roasted cauliflower)
1 cauliflower, cut into “steaks” or into small pieces
Olive oil
Salt
Pepper
1. Preheat the oven to 400F. On a baking tray with parchment paper, drizzle olive oil over the cauliflower steaks on both sides, and season with salt and pepper. If you are just making regular roasted cauliflower, toss the cauliflower with salt and pepper, and season well.
2. Roast in the oven for 20-30 minutes, or until slightly browned.
Burst Cherry Tomatoes
15-20 cherry tomatoes
Olive oil
Salt
1. On a pan over high heat with olive oil, saute the cherry tomatoes. Cover with the lid for about 30 seconds.
2. “Burst” the cherry tomatoes by gently pressing down on the tomatoes with a fork.
3. Saute for about 5 minutes, or until softened with a slightly charred skin.
Assemble the dish. Garnish with parsley and lemon juice. Enjoy!
