Cavendish Fries With Kale-Lime Crema

We recently partnered up with Cavendish Farms to create our Kale-Lime Crema and Fries. “Lime crema” is often found in Baja-California cuisine, and it is usually made with mayonnaise, sour cream and lime, served as a sauce or dip. Enjoy this recipe with a bit of kale in the mix!

Ingredients

Kale-Lime Crema

1-2 Kale leaves, roughly chopped

Salt

Pepper

Olive oil

1/2 cup mayonnaise

1/2 cup sour cream

1 garlic clove

2 tbs lime juice

Cavendish Traditional Straight Cut Fries, cooked

Tomatoes, diced

Red onion, diced

Red radish, sliced

Lime wedges

Cilantro

1. In a pan over medium-heat, saute the kale with olive oil, salt and pepper. Cook for about 5 minutes or until done. set aside.

2. In a food processor, blend the mayonnaise, sour cream, garlic clove, lime juice and kale for about 5-10 minutes, or until the kale is in small pieces.

3. Assemble the fries with tomatoes, red onion, red radish, lime wedges, cilantro and kale-lime crema. Enjoy!
