MANGO HAND PIES With Maple Whipped Cream
INGREDIENTS
Store bought pie crust (14.1oz one package containing 2 crusts), refrigerated
4 cups mango (frozen or fresh)
6 Tbsp brown sugar
2 Tbsp cornstarch
1/4 tsp cinnamon
2 Tbsp lemon juice
1 egg yolk
2 Tbsp milk
Demerara sugar (for topping)
INSTRUCTIONS
Preheat the oven to 375 F. Line the baking sheet with parchment paper.
In a saucepan, combine mango cubes, brown sugar, cornstarch, cinnamon & lemon juice. Heat for a few minutes just to thicken slightly; remove from heat & cool. Roll out pastry & cut into circles. Lay pastry circles on parchment lined baking sheet & divide filling between them. Try to keep the filling piled in the center , away from the outer edges. Use a fork to press the pastry layers together around the outside forming a seal. With a sharp knife cut vents in each hand pie.
Whisk together egg yolk & milk; brush over the tops. Sprinkle with demerara sugar & bake for 15 minutes or until golden.
MAPLE WHIPPED CREAM
INGREDIENTS
1 cup heavy cream, cold
2 tablespoons maple syrup
½ teaspoon vanilla extract
1/8 teaspoon salt
INSTRUCTIONS
Attach the whisk attachment to a standing mixer. Add all the ingredients into the bowl. (Alternatively, you can whip it by hand (or with a handheld mixer). If you do so, it might take a few minutes longer.)
Whisk in medium-low speed until foamy, about 1 minute. Increase the speed to high and whip until soft peaks form, 1-2 minutes.
TO SERVE
Top cooled mango hand pies with maple whipped cream!
