I had the pleasure in collaborating with Stacey from 50 pies 50 states to create these delicious hand pies! Our video is on IGTV - @earthmadekitchen.

MANGO HAND PIES With Maple Whipped Cream

INGREDIENTS

  • Store bought pie crust (14.1oz one package containing 2 crusts), refrigerated

  • 4 cups mango (frozen or fresh)

  • 6 Tbsp brown sugar

  • 2 Tbsp cornstarch

  • 1/4 tsp cinnamon

  • 2 Tbsp lemon juice

  • 1 egg yolk

  • 2 Tbsp milk

  • Demerara sugar (for topping)

INSTRUCTIONS

  1. Preheat the oven to 375 F. Line the baking sheet with parchment paper.

  2. In a saucepan, combine mango cubes, brown sugar, cornstarch, cinnamon & lemon juice. Heat for a few minutes just to thicken slightly; remove from heat & cool. Roll out pastry & cut into circles. Lay pastry circles on parchment lined baking sheet & divide filling between them. Try to keep the filling piled in the center , away from the outer edges. Use a fork to press the pastry layers together around the outside forming a seal. With a sharp knife cut vents in each hand pie.

  3. Whisk together egg yolk & milk; brush over the tops. Sprinkle with demerara sugar & bake for 15 minutes or until golden.

MAPLE WHIPPED CREAM
