Flaxseed Crusted Pork With Spiral Veggies

Makes 6 servings

Pork:

6 pork loin chops

1/2-1 cup ground flaxseeds

1 tsp garlic powder

1 tsp dried oregano

Pinch of salt and pepper

Fresh rosemary leaves

1 tb lemon juice

olive oil

Spiral Veggies:

1-2 zucchini, spiralized*

1-2 yellow squash, spiralized*

2-3 cloves garlic, minced

Olive oil

Pinch of salt and pepper

Lemon Herb Aioli:

1/2 cup mayonnaise

1 tsp greek seasoning

1 garlic clove, minced

1/2 tsp lemon juice

1. Preheat the oven to 400F. line a pan with parchment paper. Set aside.

2. In a large plate, mix the ground flaxseeds, garlic powder, oregano, salt and pepper. coat the pork chops on all sides, and place on the pan. Drizzle with olive oil and lemon juice, and top each pork chop with a few rosemary leaves. bake in the oven for about 20 minutes, or until done.

3. Lightly saute the zucchini and yellow squash in a large pan with olive oil and garlic. Season with salt and pepper.

4. In a small bowl, mix all the ingredients for the aioli. plate the dish and enjoy with some pita bread, flatbread or naan at the side!

*You can also use frozen spiralized vegetables, such as this one, if you do not have a spiralizer.
