Tahini Chocolate Chip Cookies

Makes 16-18

Ingredients

1/2 cup butter, room temperature

1/2 cup white granulated sugar

1/2 cup brown sugar

1 egg

1 egg yolk

1/2 cup tahini, well stirred

1/2 tsp vanilla

1 cup flour

3/4 tsp baking soda

3/4 cup chocolate chips

Salt to finish

1. In a large bowl, cream together the butter and sugars using a mixer or spatula. Add in the eggs, tahini and vanilla, and blend until smooth.

2. Add in the flour and baking soda. Blend until incorporated, and then fold in the chocolate chips.

3. Preheat the oven to 350F. Line a pan with parchment paper and scoop out about 1-2 tbs of cookie dough, placing the dough balls on the parchment paper. Gently flatten the dough with your fingertips. Freeze the pan of cookies for about 10 minutes.*

4. Take the cookies out of the freezer, and bake for about 12-18 minutes (or until browned). Sprinkle a pinch of salt on each cookie to finish.

*This is optional, but it helps the cookies retain the shape and not spread so much.
