Citrus Tilapia With Wild Rice And Spinach Salad

Makes 4 servings

Ingredients

Spinach

1-2 oranges, cut into small chunks

Chopped walnuts, to garnish

4-5 cups of wild rice, cooked (follow instructions on the package).

Tilapia:

1-2 tsps thyme, chopped

4-5 tbs olive oil

Juice from 1/2 an orange

Juice from 1/2 a lime

2-3 tsps garlic powder

2-3 tsps paprika

2-3 tsps cumin

pinch of salt and pepper

Cilantro-Lime Yogurt Dressing:

1/4-1/2 cup plain yogurt

1 tsp lime juice

1-2 tsps cilantro, minced

pinch of salt

1. Preheat the oven to 375F. Line a baking tray with parchment paper. Set aside.

2. In a large bowl, mix the marinade for the fish. Add the fish and mix altogether. Cover with plastic wrap and refrigerate for about 15 minutes.

3. Take out the fish and place it on the baking tray. Bake for about 20-25 minutes, or until slightly browned and cooked through. (Check with a fork).

4. Mix the ingredients for the dressing in a bowl.

5. Assemble the dish and enjoy!

Notes:

- You can use brown rice or white rice, instead of wild rice.

- You can toss the salad separately, instead of adding it on top of the dish.

- Make this dish ahead of time! this dish can last up to 1.5 weeks in the fridge.
