Beef and Spinach Lasagna

Makes 8-10 servings

Ingredients

Olive oil

1 onion, diced

3-4 garlic cloves, minced

454g or 1 package of ground beef

312g or 1 package of fresh spinach

6-8 tomatoes, diced

1 jar of marinara sauce (save about 1/4th of the jar for the bottom of the baking dish)

1 package of lasagna, cooked or use oven-ready lasagna

320g or 1 package of shredded mozzarella cheese

Basil to garnish

1. In a pan over high heat, add the olive oil. Saute the onions and garlic for about 1 minute, and then add the beef. Cook for about 5 minutes or until done, then add the spinach. Cook for about 5 more minutes or until the spinach has wilted, and then add the tomatoes. Cover the pan and simmer on low for about 15 minutes.

2. Give the mixture a stir - the tomato juices should release and a sauce might form. Add the jar of marinara sauce and simmer on low for about 10 more minutes with the lid covered.

3. Preheat the oven to 375F. Assemble the lasagna in a baking dish: pour the saved 1/4th cup of sauce at the bottom of the baking dish. Spread the sauce. Add a layer of lasagna, and then the beef mixture, and the cheese. Continue to add the layers and finish it off with cheese on top.

4. Bake for about 20 minutes or until the cheese has browned. Garnish with basil. Enjoy!
