Mini Morning Glory Muffins
Makes about 36 mini muffins, or 16-18 regular-sized muffins
Ingredients
1 cup flour
1/2 cup oats
1 1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
2/3 cup canola or vegetable oil
1/2 cup brown sugar
1/2 cup maple syrup
2 eggs
1 tsp vanilla
1 granny smith apple, grated and dried with a paper towel
1/2 cup mini chocolate chips
1 tb flaxseeds
1. Preheat the oven to 350F. Line muffin pan(s) with muffin liners. Set aside.
2. In a large bowl, mix the dry ingredients together. Set aside.
3. In another large bowl, mix the oil, brown sugar and maple syrup together until combined. Add in the eggs and vanilla and whisk for about 20-30 seconds. Mix in the grated apple until combined. Add in the dry ingredients and mix well. Fold in the mini chocolate chips and flaxseeds.
4. Pour the batter into the muffin pan(s). Bake for about 20 minutes or until browned and done in the inside (check with a toothpick).
