Cauliflower Fritters with Cabbage-Apple Salad

Makes 10-12 fritters

Makes about 4 servings of salad

Ingredients

1/2 head of cauliflower, chopped into small pieces (or a bag of cauliflower rice)

1 cup Panko

4-5 eggs

1 cup frozen peas, cooked and cooled

1/4 cup of feta cheese

1-2 tsps garlic powder

1-2 tsps Greek seasoning

Olive oil for the pan

Sour cream and green onion to garnish

For the salad:

1/2 cabbage, chopped

1 apple, sliced

Pomegranate arils

1-2 tsps red wine vinegar

1/4 cup honey

1/4 cup olive oil

pinch of salt

1. For the cauliflower fritters, mix all the ingredients into a large bowl. In a pan with about 1-2 tbs of oil over high heat, add 1-2 spoonfuls of the cauliflower mixture. After about 30-50 seconds, flip the fritter until both sides are browned and cooked.

2. For the salad, combine the red wine vinegar, honey, olive oil and salt into a small bowl. Mix until combined, and then toss with the salad.

3. Serve the fritters with sour cream and green onion.
