Easy Turkey Chili

Makes about 5 quarts (1 dutch oven)

Ingredients

Olive oil

5 cloves garlic, minced

1/2 onion, diced

484g or 1 pack of extra lean ground turkey

2 carrots, diced

1 celery bunch, diced

1 red bell pepper, diced

1-2 tomatoes, diced

1-2 cups of corn

1-2 tbs Tex Mex seasoning mix

1 tsp cumin

1 tsp paprika

1 tsp garlic powder

Salt and pepper to taste

1 can of red kidney beans

1 small can of tomato paste

1 can of diced tomatoes

1 cup of chicken stock

Sour cream (to put on top)

1. In a large pot or dutch oven, pour about 2-3 tbs of olive oil. Saute the garlic and onion for about 1 minute. Add in the ground turkey and cook for about 3-5 minutes.

2. Add in the vegetables and stir for a few seconds. Cover with the lid and let everything cook for about 4-5 minutes.

3. Add in the beans. Season the mixture with the spices. Add in the tomato paste and incorporate throughout the mixture. Add in the diced tomatoes and chicken stock. Mix everything, and then cover with a lid and let it simmer on low for 15-20 minutes.

4. Give the chili one more stir and serve with sour cream and quesadillas!
