Pound Cake with Caramelized Plums

Makes 1 loaf

Ingredients

1/2 cup butter, room temperature

1 cup sugar

3 eggs

1 tsp vanilla

1/2 tsp lemon juice

1/2 cup sour cream

1 1/2 cup cake and pastry flour

1/4 tsp salt

1/2 tsp baking soda

Caramelized Plums

1-2 red plums

1-2 tbs butter

1-2 tbs sugar

3-4 tbs water

1. Preheat the oven to 325F. Line the bottom of a loaf pan with parchment paper. Spray with cooking spray. Set aside.

2. In a large bowl, cream the butter and sugar using a hand mixer or stand mixer. Slowly add the eggs, and then the vanilla and lemon juice. Mix until combined, and then add the sour cream. Mix all the ingredients together until smooth.

3. Add in the dry ingredients. Pour the batter into the loaf pan and bake for about an hour, or until a toothpick comes out clean.

4. For the caramelized plums, melt the butter on a pan over medium-high heat. Add in the sugar and plums. Cook until the plums become slightly brown, then add the water to create a sauce.

5. Plate with whipped cream and pistachios. Enjoy!
