30-Minute Buddha Bowl with Miso Sesame Dressing

Makes 4 servings

Ingredients

Kale

Wild rice, cooked

Chicken, cooked

Carrots, shredded

Cherry tomatoes, halved

Radish, sliced

Sweet potatoes

Olive oil

Salt and pepper

Chopped almond (to garnish)

Cilantro (to garnish)

Lime wedge (to garnish)

Dressing

1 tb miso paste

1/4 tsp grated ginger or ground ginger

1 tb maple syrup

2 tb rice vinegar

1/4 cup sesame oil

1/2 cup water

1. Preheat the oven to 375F. Line a baking tray with parchment paper and set aside.

2. Cube the sweet potatoes. In a bowl, mix the sweet potatoes with about 2-3 tbs of olive oil, salt and pepper. Roast for about 20 minutes, or until done.

3. Combine all the ingredients for the dressing. Set aside.

4. Assemble the bowl. Enjoy!
