Pesto-Artichoke Pizza

Makes 4-5 personal pizzas, or 1 large size pizza

Ingredients

You can use store-bought pizza dough or make your own using the recipe below:

1 1/4 cups warm water

1/2 tb yeast

1/2 tb honey

1/2 tb olive oil

2 1/2 cups flour

Pinch of salt

1 small jar of artichoke hearts

1 small jar of store-bought pesto

Mozzarella cheese

Feta cheese

1. In a bowl, whisk the warm water, yeast, honey and olive oil in a bowl. Let it sit for 1-2 minutes, until the mixture becomes slightly frothy.

2. In a large bowl, mix the flour and salt.

Using a stand mixer with the dough hook, pour in the yeast/water mixture slowly until a ball of dough forms. Pour the dough onto a flat surface, and knead the dough for about 10-20 seconds. Place the dough in a large oiled bowl, and cover the bowl with a kitchen towel or plastic wrap. Let it rise for 2 hours.

If you are using your hands, create a well in the centre of the flour/salt, and slowly add a bit of the yeast/water mixture. Bring in the flour from the sides with a fork and mix. Interchange between mixing and adding the yeast/water mixture. Pour the dough onto a flat surface, and knead the dough for about 10-20 seconds. Place the dough in a large oiled bowl, and cover the bowl with a kitchen towel or plastic wrap. Let it rise for 2 hours.

3. Preheat the oven to 400F. Line a baking tray with parchment paper. Set aside.

(If you are using a pizza stone, follow the instructions on the packaging. I preheated my oven to 450F with my pizza stone.)

4. Flatten the pizza dough however you’d like. Add the toppings. Bake for about 10-20 minutes, or until browned.
