Chicken Tikka Masala
Makes 4-6 servings
Ingredients
2 chicken breasts, cut into chunks
Vegetable or canola oila
2-3 garlic cloves, minced
1 onion, diced
1-2 tsp turmeric
1 tsp garam masala
1 tsp cumin
1-2 cups plain yogurt
1/4 cup tomato paste
1/3 cup 35% cream or heavy cream
Salt and pepper to taste
Parsley to garnish
1. In a large pan with 2 tbs of oil, saute the onion and garlic over medium-high heat.
2. Add the spices and stir, and then add the chicken. Cook for about 10 minutes, or until the chicken is done.
3. Add in the tomato paste and yogurt. Mix the ingredients, and let it cook for about 5 minutes.
4. Add in the cream and mix. Simmer on low with the lid covered for another 10 minutes.
5. Finish with salt and pepper, and then garnish with parsley. Serve with some rice and vegetables on the side.
