Chinese Five Spice Harvest Salad

Makes 1-3 servings

Ingredients

Vegetable oil

1-2 cups of butternut squash spirals

1 tsp Chinese five spice powder

1 tsp brown sugar

1 tsp soy sauce

Shredded carrots

Kale, chopped

Red cabbage, chopped

Pomegranate arils

Walnuts

Apples, sliced

Pears, sliced

Dressing:

1 tsp seasoned rice vinegar

3 tbs vegetable oil

3 tbs sesame oil

1 tsp soy sauce

1/4 tsp garlic powder

1. In a pan over medium high heat, cook the butternut squash spirals with vegetable oil. Season with the five spice powder and add in the brown sugar. Add in the soy sauce and cook until slightly browned. Set aside.

2. In a small bowl, mix all of the ingredients for the dressing. Set aside.

3. Combine the carrots, kale, red cabbage and pomegranate arils in a large bowl, and toss with the dressing. Assemble the salad with the butternut squash spirals, apples, pears, pomegranate arils and walnuts.
