Pumpkin Shortbread Cookies
Makes 12-14 cookies
Ingredients
1/2 cup butter, room temperature
1/3 cup powdered sugar
1 tb pumpkin puree
1/4 tsp vanilla
1 cup flour
1/8 tsp salt
1/2 tsp pumpkin spice
1. In a bowl, combine the butter, powdered sugar, pumpkin puree and vanilla, and mix until smooth. Add in the flour, salt and pumpkin spice, and mix until a dough forms.
2. Knead the dough for a few seconds, and mold the dough into a disc. Cover the dough with plastic wrap and refrigerate for about 1/2 an hour.
3. Preheat the oven to 325F. Line a baking tray with parchment paper. Roll out the dough and cut the dough into rectangles or into any other shape. Gently poke the cookies with a fork. Bake for 20 minutes or until golden brown.
