Fish Tacos with Superfood Slaw
Makes 10-12 tacos
Ingredients
2 fish fillets (cod or tilapia)
1-2 tbs paprika
1-2 tbs chili powder
1 tb garlic powder
1 tb cumin
Vegetable or olive oil
1 cup kale, chopped
1/4 cup red cabbage, chopped
1/4 cup brussels sprouts, chopped
1/4 cup green cabbage, chopped
1/4 cup broccoli stalk, chopped
1-2 avocados, diced
1/2 cup mayonnaise
1/2 tb honey
1 tsp lime juice
Cilantro to garnish
Salt and pepper
10-12 medium-sized tortillas
(You may also buy a kale blend for the vegetables)
1. In a large bowl, combine the vegetables. If you have a kale salad blend, pour the blend into the bowl.
2. In a small bowl, mix the mayonnaise, honey, lime juice and salt and pepper. Pour over the vegetables and toss until combined. Set aside.
3. Combine the spices in a large bowl or plate, and coat the fish with the spices.
3. In a pan over high heat, pour in about 1-2 tbs of oil. Cook the fish on both sides until browned and cooked through inside, for about 10-15 minutes.
4. Assemble the tacos with the fish, superfood slaw, avocado, cilantro and a lime wedge.
