Potato Latkes

Makes 8-10 latkes

Ingredients

5-6 Yukon Gold potatoes, peeled

1/2 an onion

2 eggs

2 tbs flour

Salt and pepper

Olive oil

Cucumbers, smoked salmon, sour cream and chives

1. Grate the potatoes and onion using a box grater. Dry out the excess liquid using a kitchen towel or paper towel.

2. In a large bowl, mix the potatoes, onion, eggs, flour, salt and pepper.

3. Heat a pan with olive oil over medium-high heat, and pour about 1/4 cup of the potatoes onto the pan. Lightly flatten, and cook for about 1-2 minutes on each side, or until browned on each side.

4. Serve with cucumbers, smoked salmon, sour cream and chives.
