Simple Holiday Couscous Salad
Makes 4-6 servings
Ingredients
4-6 cups of couscous, cooked
1-2 cucumbers, diced
4-5 red radishes, sliced into triangles
1-2 watermelon radishes, sliced into triangles
1/2 cup dried cranberries
1/2 cup pumpkin seeds
Parsley, minced
Juice from 1 lemon
2-3 tbs olive oil
Pinch of salt
Pecorino Romano cheese
1. Mix together the olive oil, lemon juice and salt. Set aside.
2. Mix all of the other ingredients into a large bowl, except for the cheese. Toss with the salad dressing, and then shave some cheese on top. Enjoy!
