Nutty Cashew Butter Chocolate Cookies
Makes 20-24 cookies
Ingredients
1/2 cup butter, room temperature
1/2 cup white granulated sugar
1/2 cup brown sugar
1 egg
1 egg yolk
1/2 cup cashew butter, well stirred
1/2 tsp vanilla
1 cup flour
3/4 tsp baking soda
1/4 tsp salt
1/4 cup walnuts, chopped + more to sprinkle on top
1/4 cup pistachios, chopped + more to sprinkle on top
3/4 cup chocolate chips
1. In a large bowl, cream together the butter and sugars using a mixer or spatula. Add in the eggs, cashew butter and vanilla, and blend until smooth.
2. Add in the flour and baking soda. Blend until incorporated, and then fold in the nuts
3. Preheat the oven to 350F. Line a pan with parchment paper and scoop out about 1-2 tbs of cookie dough, placing the dough balls on the parchment paper. Gently flatten the dough with your fingertips. Freeze the pan of cookies for about 10 minutes.*
4. Take the cookies out of the freezer, and bake for about 15 minutes (or until browned). As the cookies cool, melt the chocolate chips. Dip the cookies into the melted chocolate and sprinkle with some nuts.
*This is optional, but it helps the cookies retain the shape and not spread so much.
