Simple Coconut Curry Lentil Soup

Makes 2 servings

Ingredients

Vegetable oil

1 tb curry powder

1 tsp garlic powder

1 tsp paprika

1 tsp onion powder

1/4 cup diced onions

2 garlic cloves, minced

1 cup dried red lentils

1/4 cup canned crushed tomatoes

3 cups chicken broth (or water if you want a vegan version)

1 cup coconut milk, plus more to finish on top

Chopped parsley or cilantro

Lime wedges

1. In a pot over medium-high heat, add in the oil and spices. Let the spices “toast” for about 10 seconds, and then add the garlic and onions. Saute until softened.

2. Add in the lentils and stir. Add in the crushed tomatoes and chicken broth. Simmer on medium-low for about 5 minutes.

3. Add in the coconut milk and simmer on low for about 5-7 more minutes, or until the lentils have cooked. Drizzle with the remaining coconut milk, lime juice, and add chopped parsley or cilantro.
