Caprese Egg Bagel

Makes 1

Ingredients

1 bagel

1-2 slices of mozzarella cheese

1-2 slices of tomatoes

Basil

1 egg

1 tb white vinegar

Salt and pepper

Balsamic glaze

Olive oil

1. Poach the egg: Crack the egg into a bowl and set aside. In a pot of boiling water, add the white vinegar. Using a spoon, stir the water quickly until a “whirlpool” forms, and then add the egg into the “whirlpool”. Continue to stir the water, and let the egg cook for about 1 minute. Using a small mesh strainer, take out the egg, and set aside. Here is more information on poaching an egg.

2. Assemble the dish by layering the ingredients. Finish off the dish with a drizzle of olive oil, balsamic glaze, salt and pepper. Enjoy!
