Za’atar Sumac Chicken

Makes 4-6 servings

Ingredients

8-10 chicken thighs, bone-in, skin-on

1 cup olive oil

4-5 garlic cloves, minced

Juice from 1/2 a lemon

1/4 cup Za’atar

2 tbs sumac

1 tb dried rosemary

1 tb dried oregano

1/2 tb garlic powder

1 tsp paprika

Salt and pepper

1-2 tbs balsamic vinegar

1-2 carrots, cut into medium chunks

1/2 onion, cut into medium chunks

1. In a bowl, combine all of the ingredients except for the carrots and onions. Let it sit and marinate for 20 minutes.

2. Preheat the oven to 400F. Line a baking tray with parchment paper. Set aside.

3. In a pan over medium-high heat, sear the chicken thighs on both sides to get a brown colour and slightly crispy texture. Place the chicken thighs on the baking tray and add the carrots and onions. Cover with tin foil and bake for 20-25 minutes.

4. Remove the tin foil, and flip the chicken. Bake for another 10-15 minutes, or until done on the inside.

5. Enjoy with salad, rice and baba ganoush!
