Peach & Pistachio Puff Pastry Hand Pies

Makes 3-4 hand pies

Ingredients

1 sheet of puff pastry, thawed

1 medium-ripe peach, cut into small chunks

2-3 tbs water

1 tsp lemon juice

2-3 tsps cornstarch

1/2 tb brown sugar

1/2 tsp cinnamon

2-3 tbs chopped pistachios

1 egg + 1 tb water (for the egg wash)

1. Preheat the oven to 375F. The puff pastry may come with parchment paper. If not, line a baking tray with parchment paper.

2. In a small pot over medium-high heat, add in the peaches, water, lemon juice, cornstarch, brown sugar and cinnamon. Combine the mixture and let it simmer on medium-low for about 2-4 minutes, or until the sauce has thickened.

3. Cut the puff pastry into rectangles and fill the puff pastry with the peaches. Close the pie with the other layer of the puff pastry and seal with a fork. Brush the tops with the egg mixture.

4. Bake for 20-30 minutes, or until brown and flakey.
