Cali-Baja Shrimp Tacos

Makes 4-6 tacos

Ingredients

Shrimp

400g or about 18 black tiger shrimp, peeled

1 tb cumin

1 tb paprika

1 tsp chili powder

1 tsp garlic powder

1 tsp onion powder

Pinch of salt and pepper

Olive oil

Lime Crema

1/4 cup mayonnaise

1/4 cup sour cream

1/4 tsp salt

1 garlic clove, grated

1/2 tsp lime juice

Tacos

Tortilla

Pre-made slaw

10-12 cherry tomatoes, quartered

1 avocado, cubed

Feta or cotija cheese

Cilantro

Salsa verde (optional)

1. In a large bowl, combine the shrimp and the spices. Cook the shrimp on a pan over medium-high heat with some olive oil, until done. Set aside.

2. For the lime crema, combine the mayonnaise, sour cream, salt, garlic and lime juice. Mix well. Set aside.

3. Grill the tortillas, or warm the tortillas in the microwave or toaster oven. Assemble the tacos with the shrimp and vegetables over the tortilla. Sprinkle the cheese, top with the lime crema and cilantro. Serve with the salsa verde.
