Nectarine Almond Crumble

Makes 1 serving (in a 6.5” baking dish)

Nectarine Filling

7-8 nectarines, sliced into wedges

2 tbs cornstarch

2 tbs lemon juice

3 tbs granulated sugar

Crumble

1/2 cup cold butter, grated

½ cup almond flour

½ cup cake & pastry flour

¼ cup brown sugar 

1/2 tb cinnamon + more to sprinkle on top

Pinch of salt

1. Preheat the oven to 350F.

2. Combine all of the nectarine filling ingredients into a bowl and mix altogether. Pour the nectarine filling mixture into a small or medium-sized glass baking dish. Set aside.

3. Combine and mix all of the crumble ingredients using your hand. Create "crumbles" with your hand. Pour the mixture over the nectarine filling mixture and bake for about 30 minutes, or until browned on top. Enjoy!
