Apple Pie Smoothie Bowl

Hello friends! I wanted to create this recipe just in time for the holidays. I’m currently in Costa Rica, and I decided to make a cooling smoothie bowl in this hot weather, using fall/winter flavours. Enjoy!

Makes 1-2

Ingredients

1 tb white or brown sugar

1 tsp cinnamon

1 tb vegetable or canola oil

1-2 frozen bananas, chopped

1-2 apples (cut into medium-sized chunks, divided)

1/4 cup of milk

1/4 cup walnuts

2 tbs of any nut butter

Granola to top

1. In a bowl, combine the sugar, cinnamon, oil and half of the chopped apples. Pour the mixture on a small toaster oven tray lined with parchment paper or tin foil, and bake in the toaster oven for about 10 minutes on medium heat.

2. In a blender, combine the frozen bananas, apples, milk, walnuts and nut butter. Pulse until smooth. The mixture should be somewhat thick - thicker than a regular smoothie.

3. Pour the smoothie mixture into a bowl. Top with apples, granola and cinnamon.
