Olive Oil Thumbprint Cookies

Makes 20-24 cookies

Ingredients

1/2 cup extra virgin olive oil

1/2 cup sugar

2 eggs

2 cups flour

1/4 cup cake & pastry flour

1/2 tsp salt

1/2 tsp baking powder

1. Preheat the oven to 350F. Line 2 baking trays with parchment paper. Set aside.

2. In a large bowl, combine the olive oil, sugar and eggs. Whisk altogether using a whisk or hand mixer.

3. Add the dry ingredients, and mix using a spatula or a hand mixer.

4. Roll out the cookies, and create “thumbprints” on each cookie. Fill each dent with some jam.

5. Bake for about 15 minutes, or until slightly browned. Enjoy!
