Valentine’s Day Linzer Torte

Makes 6-8 servings

Ingredients

3/4 cup unsalted butter, room temperature

1/2 cup sugar

1 egg yolk

3/4 cup almond flour

3/4 cup cake and pastry flour

1 1/2 tsp baking powder

1 1/2 tsp pumpkin pie spice

1/4 tsp salt

1 - 1 1/2 cups jam of your choice

1. In a hand or stand mixer, mix the butter, sugar and egg yolk until combined. Add in the dry ingredients. Mix until well-incorporated.

2. Mold the dough into an 8” tart pan. If there is extra dough, you can make cookies out of them, or save some of the dough to decorate on top. Gently poke holes on the bottom of the tart with a fork. Freeze the tart crust for about 30 minutes. If you make cookies or tart heart decorations, freeze that as well.

3. Preheat the oven to 350F. Take out the tart and pour jam on top. Add a tart design on top if you wish.

4. Bake for 25-35 minutes, or until it is browned around the edges. Enjoy!
